Chicken & Lime Salsa

I love Far Eastern flavours, so I’ve decided to give you a super light recipe for one of my favourite salsas. This salsa can be served with a whole chicken, by just roasting it on the bone for 35 to 40 minutes and placing the salsa on the side!

  • Step 1

    For the marinade: mix half of the lime peel, the lime juice, the oil and pepper to taste. Marinate the chicken for no longer than 30 minutes (up to 2 hours if whole chicken).

  • Step 2

    Grill pineapple until grill marks are visible, an average of 3 to 4 minutes in total. Dice the pineapple, add tomato, red onion, green sweet pepper, cilantro leaves, the remaining lime peel, lime juice and the extra virgin olive oil as well as salt to taste. Mix well, then cover and chill until serving time.

  • Step 3

    Grill chicken directly over medium heat for 6 to 8 minutes in total, or until chicken is tender and is no longer pink..

  • Step 4

    Top with salsa and serve immediately (if whole chicken, roast it at 200C, for 35 to 40 minutes if chicken is 1 to 1.2 kg).

  • 4 medium skinless, boneless chicken breast halves
  • 3 tbs lime juice
  • 1 tbs olive oil
  • 1 clove garlic, minced
  • 250g fresh, sliced pineapple
  • 1/2 cup chopped red onion soaked in cold water
  • 1 large tomato, seeded and chopped
  • 1/2 cup chopped green sweet pepper
  • 2 tbs roughly chopped Coriander
  • 2 tsp lime (green lemon) peel
  • 1 tbs extra virgin olive oil
  • 2 tbs lime juice
  • Salt to taste
  • Black Pepper to taste
